Food is at the heart of the vacation experience. Food enriches our moments, nourishes us and gives us a taste of the very cultures we explore. So, it should come as no surprise that although first-time cruisers tend to be drawn to destinations, the top two interests of returning cruisers are actually food and entertainment. We talk about our world-class entertainment plenty, but our world-class dining deserves some attention, too — and at the helm is Chef John Suley.

Suley joined Royal Caribbean last year as Vice President of Food and Beverage Operations, coming from our sister brand, Celebrity — the line with probably the best-known culinary program in the industry. He's bringing that same quality and attitude to Royal Caribbean, striving to infuse a vibrant, new energy into our most popular dining venues across the fleet.

In the Windjammer, for example, he's working to transform the beloved dining mainstay into an experience that's more personal, while still varied and comprehensive. "We're trying to deliver more individually portioned items, which make it easier, seamless, and more visually appealing for the guest." The Windjammer is an important part of the cruise experience, he adds: "We overlook how influential it is — it's the most popular venue for breakfast and that's the most important meal of the day. [The guest] experience each morning starts at the Windjammer. It starts with our crew. Smiling, being genuine and energetic — creating an emotional connection with the guest from the very beginning."

The Main Dining Room is another area he's looking to enhance. "We're looking at how we present the menu, highlighting more adventurous options for foodies that push the culinary boundary." The approach is focusing on more distinctive, higher quality choices that pack a flavorful punch with each bite. "We actually might have too much variety, right now — people get overwhelmed with all the options and stick to what they know. We can change that to enhance their experience each night."

Suley has big plans for Royal Caribbean, and he's only just gotten started. Whatever's ahead, I assure you it will be a taste of adventure your clients won't be able to resist.
